Ingredients
  

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, diced

1 teaspoon dried thyme

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

6 cups low-sodium chicken broth

1 can (14 oz) diced tomatoes, undrained

1 cup uncooked quinoa

2 cups fresh spinach

Salt and pepper to taste

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, or until softened.

    Stir in the minced garlic, sliced carrots, and diced celery. Cook for another 5 minutes until the vegetables are slightly tender.

      Add the dried thyme, oregano, and optional red pepper flakes, mixing well to combine and release the flavors.

        Place the chicken breasts in the pot and pour the chicken broth and diced tomatoes over them. Bring the mixture to a boil, then reduce to a simmer.

          Cover and let it simmer for 15-20 minutes, or until the chicken is cooked through. Once cooked, remove the chicken breasts and set aside to cool slightly.

            Add the uncooked quinoa to the pot. Stir well and simmer for an additional 15 minutes, or until the quinoa is cooked and fluffy.

              While the quinoa cooks, shred the chicken using two forks. Once shredded, add it back to the pot along with the fresh spinach. Stir until the spinach wilts, which should take about 2-3 minutes.

                Squeeze in the lemon juice, and season the soup with salt and pepper to taste. Allow the flavors to meld for a few more minutes.

                  Serve hot, garnished with fresh parsley.
