Ingredients
  

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

8 ounces fettuccine pasta

1 cup fresh spinach

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.

    Sear the Chicken: Season the chicken breasts with salt and pepper. In a large skillet over medium-high heat, heat the olive oil. Add the chicken breasts and sear for about 5-7 minutes on each side, or until cooked through and golden brown. Remove the chicken from the skillet and let it rest before slicing.

      Make the Sauce: In the same skillet, reduce the heat to medium and add the minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant, then stir in the sun-dried tomatoes. Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer.

        Add Cheese and Greens: Gradually whisk in the Parmesan cheese until melted and smooth. Stir in the fresh spinach, allowing it to wilt in the sauce.

          Combine Everything: Slice the seared chicken and add it back to the skillet with the sauce. Toss in the cooked fettuccine, mixing well to coat the pasta and chicken in the creamy sauce.

            Serve: Adjust seasoning with salt and pepper as needed. Plate the pasta and chicken, garnishing with fresh basil leaves. Serve warm and enjoy!
