3 lbs russet potatoes, peeled and cubed

1 cup heavy cream

½ cup unsalted butter, cubed

1 cup sour cream

1 cup shredded sharp cheddar cheese

4 cloves garlic, minced

Salt and pepper to taste

Fresh chives or parsley, for garnish (optional)

Instructions
 

Cook the Potatoes: In a large pot, cover the cubed potatoes with cold water and add a pinch of salt. Bring to a boil over high heat, then reduce to a simmer and cook for about 15-20 minutes until the potatoes are fork-tender.

    Prepare Cream Mixture: While the potatoes cook, heat the heavy cream, minced garlic, and cubed butter in a small saucepan over low heat until the butter melts and the mixture is warm. Do not bring it to a boil.

      Mash the Potatoes: Drain the cooked potatoes and return them to the pot. Use a potato masher or ricer to mash the potatoes until smooth.

        Combine Ingredients: Slowly pour the warm cream and butter mixture into the mashed potatoes, stirring until fully incorporated. Add the sour cream and shredded cheddar cheese, and mix until creamy and smooth. Season with salt and pepper to taste.

          Transfer to Baking Dish: Spoon the mashed potatoes into a greased casserole dish or an airtight container if you're prepping to store.

            Cool and Store: If making ahead, allow the potatoes to cool to room temperature, then cover with plastic wrap or a lid. Store in the refrigerator for up to 2 days, or freeze for up to a month.

              Reheat Before Serving: To reheat, if frozen, thaw the potatoes overnight in the refrigerator. Preheat your oven to 350°F (175°C).
