2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

2 cups peeled, cored, and diced apples (like Granny Smith or Honeycrisp)

½ cup brown sugar, packed

1 teaspoon lemon juice

1 teaspoon vanilla extract (for apple mixture)

½ cup powdered sugar (for glaze)

1-2 tablespoons milk (for glaze)

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper.

    Prepare Apples: In a medium bowl, toss the diced apples with brown sugar, lemon juice, and the additional teaspoon of vanilla extract. Set aside to allow the flavors to meld.

      Mix Dry Ingredients: In another large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

        Cream Butter and Sugar: In a separate mixing bowl, beat the softened butter and granulated sugar together until light and fluffy. This should take about 3-4 minutes.
