4 boneless, skinless chicken breasts

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

2 eggs, beaten

1/4 cup all-purpose flour

1/2 cup marinara sauce

1 cup shredded mozzarella cheese

2 tablespoons fresh parsley, chopped (for garnish)

Olive oil for frying

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1 inch using a meat mallet. This ensures even cooking.

      Set Up Breading Stations: In three separate shallow bowls, set up your breading stations:

        - In the first bowl, add the flour seasoned with a pinch of salt and pepper.

          - In the second bowl, add the beaten eggs.

            - In the third bowl, mix together the Parmesan cheese, breadcrumbs, garlic powder, onion powder, Italian seasoning, and a little more salt and pepper.

              Bread the Chicken:

                - Dredge each chicken breast in the flour, shaking off excess.

                  - Dip into the beaten eggs, coating evenly.

                    - Finally, press into the Parmesan breadcrumb mixture, ensuring it’s well-coated.

                      Sear the Chicken: In a large skillet, heat about 2 tablespoons of olive oil over medium-high heat. Once hot, add the breaded chicken breasts. Sear for about 4-5 minutes on each side, or until golden brown. You may need to do this in batches to avoid overcrowding the pan.

                        Transfer to Baking Dish: Once seared, transfer the chicken breasts to a greased baking dish.

                          Add Sauce and Cheese: Spoon marinara sauce over each chicken breast, then sprinkle generously with shredded mozzarella cheese.

                            Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the cheese is bubbly and golden.

                              Garnish and Serve: Remove from the oven and let rest for a few minutes. Garnish with chopped fresh parsley before serving.
