1 cup all-purpose flour

1 cup cornstarch

1 teaspoon baking powder

1 teaspoon salt

1 teaspoon garlic powder

½ teaspoon paprika

½ teaspoon black pepper

1 cup cold sparkling water (or club soda)

1 pound of white fish fillets (like cod or haddock)

Oil for frying (vegetable or canola oil)

Prepare the Fish: Make sure your fish fillets are thawed (if frozen) and pat them dry with paper towels. This will help the batter adhere better.

    Make the Batter: In a large mixing bowl, whisk together the flour, cornstarch, baking powder, salt, garlic powder, paprika, and black pepper. Slowly pour in the cold sparkling water while whisking until the batter is smooth and well-combined. Adjust the thickness by adding a little more flour or sparkling water, if necessary. You want a consistency that will coat the back of a spoon.

      Heat the Oil: In a large, deep skillet or fryer, heat about 2 inches of oil to 350°F (175°C). You can test if the oil is ready by dropping a small amount of batter into it—if it sizzles and rises, you are good to go.

        Batter the Fish: Dip each fish fillet into the batter, ensuring it’s fully coated. Allow any excess batter to drip off.

          Fry the Fish: Carefully place the battered fish in the hot oil, cooking in batches to avoid overcrowding (which can lower the oil temperature). Fry for about 4-5 minutes, or until the fish is golden brown and crispy, flipping halfway through for even cooking.
