Ingredients

2 cups all-purpose flour

1/2 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1 large egg

3/4 cup whole milk

Zest of 1 large lemon

1/4 cup fresh lemon juice

1 teaspoon vanilla extract

1 cup powdered sugar (for icing)

2 tablespoons fresh lemon juice (for icing)

Optional: Lemon zest for garnish

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C). Grease and flour a 9x13 inch baking dish.

Mix Dry Ingredients: In a mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.

Blend Wet Ingredients: In another bowl, beat together the softened butter, egg, whole milk, lemon zest, lemon juice, and vanilla extract until smooth.

Combine Mixtures: Gradually add the wet mixture to the dry ingredients, stirring until everything is just combined. Be careful not to over-mix; a few lumps are okay.

Prepare the Rolls: Pour the batter into the prepared baking dish and spread evenly. You can also pour it into individual muffin cups for single-serving rolls.

Bake: Bake in the preheated oven for 20-25 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.

Cool Slightly: Let the rolls cool in the pan for about 10 minutes before transferring to a wire rack.

Make the Icing: While the rolls are cooling, whisk together the powdered sugar and fresh lemon juice in a medium-sized bowl until smooth. If desired, add more lemon juice for a runnier icing or more powdered sugar for a thicker icing.

Glaze the Rolls: Drizzle the icing over the warm rolls. For a beautiful presentation, sprinkle some lemon zest on top.

Serve: Cut into squares or, if made in muffin tins, serve each lemon roll fresh. Enjoy your refreshing lemony treats!
