Lemon Herb Chicken & Asparagus

Ingredients
  

4 boneless, skinless chicken breasts

1 bunch of fresh asparagus, trimmed

3 tablespoons olive oil

Juice and zest of 2 lemons

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon fresh rosemary, chopped

Salt and pepper to taste

Lemon wedges for serving

Fresh parsley for garnish

Marinate the Chicken: In a bowl, combine olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, rosemary, salt, and pepper. Add the chicken breasts and coat them well. Allow them to marinate for at least 30 minutes, or up to 2 hours in the refrigerator for the best flavor.

    Preheat & Prepare: Preheat your oven to 400°F (200°C). While the oven is heating, wash and trim the asparagus, then toss it with a teaspoon of olive oil, salt, and pepper in a separate bowl.

      Sear the Chicken: In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Remove the chicken from the marinade (letting excess drip off) and sear the chicken breasts for about 3–4 minutes on each side until golden brown.

        Add Asparagus: Once the chicken is seared, arrange the asparagus around the chicken in the skillet. Pour any remaining marinade over both the chicken and asparagus.

          Bake: Transfer the skillet to the preheated oven and bake for about 15–20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C) and the asparagus is tender.

            Serve: Remove from the oven and let rest for a minute. Garnish with fresh parsley and serve with lemon wedges on the side.
