4 boneless, skinless chicken breasts

1/4 cup fresh lemon juice

Zest of 1 lemon

2 tablespoons grated fresh ginger

3 cloves garlic, minced

1 tablespoon honey

1 teaspoon soy sauce

Salt and pepper, to taste

2 tablespoons olive oil

For the Pineapple Mango Salsa:

1 cup fresh pineapple, diced

1 ripe mango, diced

1/2 red bell pepper, finely chopped

1/4 cup red onion, finely chopped

1 jalapeño, seeded and minced (optional)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Instructions
 

Marinate the Chicken: In a medium bowl, whisk together lemon juice, lemon zest, grated ginger, minced garlic, honey, soy sauce, salt, and pepper. Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal or cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

    Prepare the Salsa: In a separate bowl, combine the diced pineapple, mango, red bell pepper, red onion, jalapeño (if using), and cilantro. Squeeze fresh lime juice over the mixture and season with salt to taste. Gently toss to combine and set aside to allow the flavors to meld.

      Cook the Chicken: Heat olive oil in a skillet over medium heat. Remove the chicken from the marinade (discarding the marinade) and place it in the skillet. Cook for about 6-7 minutes per side, or until the chicken is golden brown and reaches an internal temperature of 165°F (75°C).

        Serve: Once cooked, let the chicken rest for a couple of minutes before slicing. Serve the chicken topped with a generous scoop of pineapple mango salsa.

          Garnish and Enjoy: Optionally, garnish with extra cilantro or lemon slices for presentation.
