Ingredients
  

1 lb ground turkey (or chicken)

1 cup diced onions

2 cloves garlic, minced

4 cups chicken broth

1 can (14.5 oz) diced tomatoes, with juices

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

2 cups chopped kale or spinach

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil

Optional toppings: avocado, grated cheese, sour cream, chopped cilantro

Instructions
 

In a skillet over medium heat, add olive oil. Sauté the diced onions for about 3-4 minutes until translucent. Add minced garlic and cook for another 1-2 minutes until fragrant.

    Add the ground turkey (or chicken) to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Season with salt, pepper, chili powder, cumin, and smoked paprika.

      Transfer the cooked turkey mixture to the crock pot.

        Add the chicken broth, diced tomatoes (with their juices), black beans, corn, and chopped kale (or spinach) to the crock pot.

          Stir everything well to combine, then cover and set the crock pot on low for 6-8 hours or high for 3-4 hours.

            About 30 minutes before serving, taste the soup and adjust the seasonings if needed. If you prefer a thicker soup, use a potato masher to gently mash some of the beans and tomatoes.

              Serve hot, garnished with avocado slices, grated cheese, a dollop of sour cream, and chopped cilantro as desired.
