Ingredients

2 cups penne pasta

1 lb chicken breast, diced

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

2 cups broccoli florets

1 cup cherry tomatoes, halved

1 cup shredded cheddar cheese

1 cup mozzarella cheese

1 cup heavy cream

1/2 cup grated Parmesan cheese

Fresh basil, for garnish (optional)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. In the last 2 minutes of cooking, add the broccoli florets to blanch. Drain and set aside.

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with garlic powder, onion powder, paprika, salt, and pepper. Cook for about 5-7 minutes, or until the chicken is cooked through and no longer pink.

Add Cherry Tomatoes: Stir in the cherry tomatoes and cook for an additional 2-3 minutes until they start to soften.

Make the Cheese Sauce: Reduce the heat to low and add the heavy cream to the skillet. Stir in the cheddar cheese, mozzarella cheese, and Parmesan cheese, mixing until all the cheeses are melted and the sauce is creamy.

Combine: Add the cooked penne and blanched broccoli to the skillet, tossing everything well to ensure the pasta and broccoli are evenly coated with the cheese sauce. Cook for an additional 2 minutes until everything is heated through.

Serve: Remove from heat and garnish with fresh basil if desired. Serve warm and enjoy your delicious, cheesy chicken penne!
