1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

2 large egg yolks

Zest of 2 limes

½ cup fresh lime juice (approximately 4-6 limes)

1 (14 oz) can sweetened condensed milk

A pinch of salt

Whipped cream for topping

Lime slices for garnish

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined and crumbly.

    Form Tartlet Shells: Preheat your oven to 350°F (175°C). Press the graham cracker mixture evenly into the bottom and sides of a mini tartlet pan (or muffin tin if you don’t have a tartlet pan). Bake for 8-10 minutes until lightly golden. Remove and let cool.

      Make the Filling: In a separate bowl, whisk together the egg yolks until smooth. Add the lime zest, fresh lime juice, sweetened condensed milk, and a pinch of salt. Mix until thoroughly combined and smooth.

        Fill the Tartlets: Pour the lime filling evenly into each cooled tartlet shell. Bake for an additional 10-12 minutes until the filling is set but still jiggles slightly in the center.

          Cool: Remove the tartlets from the oven and let them cool at room temperature for about 30 minutes before refrigerating for at least 2 hours for better setting.

            Serve: Once chilled, top each tartlet with a dollop of whipped cream and garnish with a lime slice before serving. Enjoy your refreshing treat!
