Ingredients
  

1 cup cottage cheese (full-fat)

6 large eggs

1 cup spinach, chopped (fresh or frozen)

1/2 cup bell pepper, diced (red or green)

1/2 cup mushrooms, sliced

1/2 cup shredded cheddar cheese

1/4 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

2 tablespoons olive oil or butter

Optional: 1/4 teaspoon red pepper flakes for heat

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish with olive oil or butter.

    Sauté the Vegetables: In a skillet over medium heat, add the olive oil or butter. Once hot, add the chopped spinach, bell pepper, and mushrooms. Sauté until the spinach wilts and the mushrooms soften (about 5-7 minutes). Remove from heat and allow to cool slightly.

      Whisk the Eggs: In a large mixing bowl, crack the eggs and whisk them together until well combined. Add the cottage cheese, garlic powder, onion powder, salt, and pepper, mixing thoroughly until smooth.

        Combine Ingredients: Fold in the sautéed vegetable mix, shredded cheddar cheese, and chopped green onions into the egg and cottage cheese mixture until evenly distributed.

          Bake: Pour the entire mixture into the greased baking dish, spreading it out evenly. If desired, sprinkle red pepper flakes on top for a little kick.

            Cooking Time: Bake in the preheated oven for 30-35 minutes, or until the edges are golden brown and the center is set. A toothpick inserted into the center should come out clean.

              Cool & Serve: Allow the bake to cool for a few minutes before slicing. Serve warm or at room temperature.
