Ingredients
  

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell peppers (red, yellow, or orange), diced

1 cup radishes, thinly sliced

1 cup red onion, finely chopped

1 cup cooked and crumbled Italian sausage (optional for added protein)

1 cup chickpeas, drained and rinsed

1/2 cup black olives, sliced

1/2 cup provolone cheese, diced

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

1/4 cup red wine vinegar

1/4 cup extra virgin olive oil

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

Prepare Vegetables: Start by washing all the fresh vegetables under cold water. Halve the cherry tomatoes, dice the cucumber, and bell peppers, thinly slice the radishes, and finely chop the red onion.

    Combine Ingredients: In a large salad bowl, combine the cherry tomatoes, cucumber, bell peppers, radishes, red onion, Italian sausage (if using), chickpeas, black olives, provolone cheese, fresh parsley, and fresh basil.

      Make the Dressing: In a small bowl or jar, whisk together the red wine vinegar, olive oil, dried oregano, salt, and pepper. Adjust the seasoning to taste.

        Dress the Salad: Pour the dressing over the salad and toss gently to combine all the ingredients well, ensuring the salad is evenly coated with the dressing.

          Chill & Serve: Optionally, cover and refrigerate the salad for about 15-30 minutes to allow the flavors to meld together. Serve chilled or at room temperature.
