Ingredients
  

2 boneless, skinless chicken breasts

4 ciabatta rolls, sliced in half

4 slices of fresh mozzarella cheese

1 medium tomato, sliced

1 cup fresh basil leaves

2 tablespoons pesto sauce

2 tablespoons olive oil

Salt and pepper to taste

Balsamic glaze (optional, for drizzling)

Instructions
 

Prepare the Chicken: Season chicken breasts with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken for about 6-7 minutes on each side, or until fully cooked. Let the chicken rest for a few minutes before slicing it thinly.

    Assemble the Panini: On the bottom half of each ciabatta roll, spread a thin layer of pesto sauce. Layer the sliced chicken, fresh mozzarella, tomato slices, and basil leaves.

      Top and Grill: Place the top half of the ciabatta rolls over the fillings. Brush the outsides of the rolls with the remaining olive oil.

        Grill the Panini: Heat a panini press or a skillet over medium heat. If using a skillet, place a heavy pan on top of the sandwiches to press them down. Grill the paninis for about 3-5 minutes on each side, or until the bread is golden brown and the cheese has melted.

          Serve & Enjoy: Remove the panini from the press or skillet, cut in half, and drizzle with balsamic glaze if desired. Serve immediately and enjoy the delightful flavors!
