Ingredients
  

1 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup fresh raspberries (or frozen, thawed)

1 cup old-fashioned oats

1/2 cup chopped nuts (walnuts or almonds, optional)

1/2 cup powdered sugar (for dusting)

Instructions
 

Preheat the Oven:

    Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

      Cream the Butter and Sugars:

        In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

          Add Egg and Vanilla:

            Beat in the egg and vanilla extract until well combined.

              Combine Dry Ingredients:

                In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet mixture, mixing until just combined.

                  Fold in Oats and Raspberries:

                    Gently fold in the oats and fresh raspberries (and nuts, if using) being careful not to break the raspberries too much.

                      Form the Cookies:

                        Using a tablespoon or cookie scoop, portion out the dough and place it onto the prepared baking sheets, spacing each cookie about 2 inches apart.

                          Create the Crumble Topping:

                            Take a small handful of extra oats, a little flour, and a tablespoon of cold butter (cut into small pieces) to create a crumbly mixture and sprinkle on top of each cookie before baking.

                              Bake:
