1/4 cup heavy cream

1 cup granulated sugar

6 tablespoons unsalted butter

1/2 cup heavy cream

1 teaspoon sea salt (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.

    Prepare the Brownie Layer:

      - Melt the butter in a saucepan over medium heat. Remove from heat and stir in sugar, eggs, and vanilla until smooth.

        - Sift together flour, cocoa powder, and salt, then fold into the butter mixture. Mix until just combined. If using, fold in chocolate chips.

          - Pour the brownie batter into the prepared springform pan and spread evenly. Bake for 20-25 minutes, or until a toothpick comes out with a few moist crumbs.

            Prepare the Cheesecake Layer:

              - In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add sugar and mix until well combined.

                - Beat in vanilla, followed by the eggs one at a time. Mix until just incorporated. Add sour cream and heavy cream, mixing until smooth.

                  - Pour the cheesecake batter over the baked brownie layer, smoothing the top with a spatula.

                    Bake the Cheesecake:

                      - Bake in the oven for 55-65 minutes, or until the edges are set and the center has a slight jiggle. Turn off the oven, crack the door open, and let the cheesecake cool for 1 hour inside.

                        Make the Caramel Sauce:

                          - In a saucepan, melt the sugar over medium heat, stirring constantly until it becomes a golden liquid.

                            - Carefully add the butter to the melted sugar and stir until melted and combined.

                              - Slowly whisk in the heavy cream until smooth, then stir in sea salt (if using). Let cool slightly.

                                Layer the Caramel on Cheesecake:

                                  - After the cheesecake has cooled, pour half of the caramel sauce over the top and gently swirl it with a knife.

                                    Chill:

                                      - Refrigerate the cheesecake for at least 4 hours or overnight. This helps solidify the layers and enhance the flavors.

                                        Serve:

                                          - Release the cheesecake from the springform pan. Top with whipped cream, chocolate shavings, and a drizzle of the remaining caramel sauce before slicing to serve.
