Ingredients
  

1 lb ground beef (80/20 for juiciness)

1/2 cup Irish stout (like Guinness)

1/2 cup finely chopped onions

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

4 slices of sharp Cheddar cheese

4 brioche burger buns

4 tablespoons creamy Irish stout mustard (or regular mustard if unavailable)

Fresh arugula or lettuce for topping

Tomato slices, onion rings, and pickles (optional accompaniments)

Instructions
 

In a large bowl, combine the ground beef, chopped onions, minced garlic, Irish stout, Worcestershire sauce, thyme, salt, and black pepper. Mix gently until just combined; don’t overwork the meat to keep it tender.

    Divide the mixture into four equal portions and shape them into patties, making a slight indentation in the center of each to prevent them from puffing up while cooking.

      Preheat your grill or a skillet over medium-high heat and lightly grease if necessary.

        Cook the burgers for about 4-5 minutes per side for medium, or until desired doneness is reached (about 160°F for medium).

          In the last minute of cooking, place a slice of Cheddar cheese on each patty to melt.

            While the burgers are cooking, toast the brioche buns on the grill or in the oven until golden brown.

              Assemble the burgers by spreading a tablespoon of Irish stout mustard on the bottom half of each bun. Add the burger patty with melted cheese, then top with arugula, tomato slices, and onion rings or pickles, if desired. Cover with the top half of the bun.

                Serve immediately with some crispy fries or onion rings on the side for an authentic pub vibe.
