Ingredients
  

2 lbs beef chuck roast, cut into 1-inch cubes

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

4 cups beef broth

3 medium carrots, sliced into 1/4-inch rounds

3 medium potatoes, peeled and diced

2 stalks celery, sliced

2 tablespoons tomato paste

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 bay leaves

Salt and pepper, to taste

1 tablespoon Worcestershire sauce

1 cup frozen peas

2 tablespoons cornstarch (optional, for thickening)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Beef: Set your Instant Pot to the 'Sauté' mode. Once hot, add olive oil. Season the beef cubes with salt and pepper, then add them to the pot in batches, browning them on all sides. Remove the beef and set aside.

    Cook the Aromatics: In the remaining oil, add the chopped onion and sauté for 2-3 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Deglaze the Pot: Pour in a splash of beef broth and use a wooden spoon to scrape any brown bits off the bottom of the pot for added flavor.

        Add Ingredients: Return the browned beef to the pot. Add the carrots, potatoes, celery, tomato paste, thyme, rosemary, bay leaves, Worcestershire sauce, and the rest of the beef broth. Stir well to combine.

          Pressure Cook: Close and seal the Instant Pot lid. Set it to 'Manual' or 'Pressure Cook' on high pressure for 35 minutes.

            Release Pressure: Once the cooking time is up, allow the pressure to release naturally for about 10-15 minutes, then switch the valve to 'Venting' to release any remaining steam.

              Thicken the Stew (Optional): If you prefer a thicker stew, mix the cornstarch with 2 tablespoons of water to create a slurry. Set the Instant Pot to 'Sauté' again, then stir in the slurry and cook for 2-3 minutes, or until the stew thickens to your desired consistency.

                Finish Off: Stir in the frozen peas. Let the stew sit for 5 minutes, then remove the bay leaves.

                  Serve: Ladle the beef stew into bowls and garnish with freshly chopped parsley. Enjoy!
