Ingredients
  

12 ounces spaghetti or linguine

6 tablespoons extra-virgin olive oil

4 cloves garlic, thinly sliced

1 teaspoon red pepper flakes (adjust to taste)

2 cups fresh cherry tomatoes, halved

½ cup white wine (preferably dry)

1 cup fresh basil leaves, torn

Zest and juice of 1 large lemon

Salt and freshly ground black pepper, to taste

Grated Parmesan cheese, for serving

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes. Sauté for 1-2 minutes until fragrant but not browned.

      Add Tomatoes: Stir in the cherry tomatoes and cook for about 5 minutes, until they start to soften and burst.

        Deglaze with Wine: Pour in the white wine, bringing the mixture to a simmer. Cook for about 3-4 minutes, allowing the wine to reduce slightly.

          Combine Pasta: Add the drained pasta to the skillet along with the reserved pasta water, basil, lemon zest, and juice. Toss everything together, ensuring the pasta is well-coated.

            Season: Season with salt and freshly ground black pepper to taste. If desired, add more olive oil for extra richness.

              Serve: Plate the pasta in shallow bowls and sprinkle with grated Parmesan cheese. Add additional fresh basil for garnish. Enjoy your midnight meal!
