1 ½ pounds flank steak, trimmed

1 cup fresh spinach leaves

½ cup ricotta cheese

½ cup sun-dried tomatoes, chopped

½ cup feta cheese, crumbled

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon balsamic vinegar

Fresh basil leaves for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Steak: Place the flank steak between two sheets of plastic wrap. Using a meat mallet or rolling pin, gently pound the steak to an even thickness, about ½ inch thick. Remove the plastic wrap and season both sides with salt and pepper.

      Prepare the Filling: In a mixing bowl, combine the ricotta cheese, sun-dried tomatoes, feta cheese, spinach, garlic, oregano, and a pinch of salt and pepper. Mix until well combined.

        Fill the Steak: Spread the cheese mixture evenly over the seasoned flank steak, leaving a small border around the edges.

          Roll It Up: Starting from the wider end, carefully roll the flank steak tightly into a log shape. Use kitchen twine to tie the roulade at 1-inch intervals to secure it. Alternatively, you can use toothpicks.

            Sear the Roulade: In a large oven-proof skillet, heat the olive oil over medium-high heat. Once hot, sear the roulade on all sides until browned, about 3-4 minutes per side.

              Bake: Drizzle the balsamic vinegar over the roulade and transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.
