1 lb boneless, skinless chicken thighs

2 tbsp olive oil

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp black pepper

1/2 tsp salt

1/4 tsp cayenne pepper (adjust to taste)

1/4 cup hot honey (store-bought or homemade)

1 cup cooked jasmine rice (or your choice of grain)

1 cup mixed greens (spinach, arugula, or kale)

1/2 cup diced cucumber

1/2 cup cherry tomatoes, halved

1/4 cup crumbled feta cheese

Fresh cilantro or parsley for garnish

Optional: lime wedges for serving

Marinate the Chicken: In a large bowl, mix olive oil, garlic powder, onion powder, smoked paprika, black pepper, salt, and cayenne pepper. Add the chicken thighs and coat them evenly. Allow to marinate for at least 30 minutes, or overnight in the refrigerator for enhanced flavor.

    Cook the Chicken: Preheat a grill or a large skillet over medium-high heat. Once hot, add the marinated chicken. Cook for about 6-7 minutes on each side until the chicken is browned and cooked through (165°F/75°C internally). Brush with hot honey during the last minute of cooking.
