Ingredients

1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (adjust to taste)

⅓ cup hot honey (store-bought or homemade)

2 cups cooked jasmine rice or quinoa

1 cup bell peppers, sliced (red, yellow, or green)

1 cup broccoli florets

½ cup corn kernels (frozen or fresh)

2 green onions, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Marinate the Chicken: In a medium bowl, combine olive oil, minced garlic, smoked paprika, onion powder, salt, black pepper, and cayenne pepper. Add the chicken thighs, ensuring they are evenly coated. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

Cook the Chicken: Heat a large skillet over medium-high heat. Remove the chicken from the marinade and add it to the pan. Cook for about 5-7 minutes per side, until the chicken is golden brown and cooked through (internal temperature should reach 165°F).

Glaze with Hot Honey: Once the chicken is cooked, reduce the heat to low, and pour the hot honey over the chicken. Allow it to simmer for about 2-3 minutes, turning the chicken to coat it evenly with the glaze.

Prepare the Vegetables: In the same skillet, add bell peppers, broccoli, and corn. Sauté for about 4-5 minutes until the vegetables are tender-crisp.

Assemble the Bowls: In serving bowls, layer cooked jasmine rice or quinoa at the bottom, then top with the sautéed vegetables. Slice the hot honey-glazed chicken and arrange it on top.

Garnish and Serve: Finish with sliced green onions, fresh cilantro, and a lime wedge on the side for squeezing. Serve immediately and enjoy your delicious Hot Honey Chicken Bowls!
