Ingredients
  

1 lb boneless chicken thighs, cut into bite-sized pieces

1 cup jasmine rice (or your preferred grain)

2 tablespoons olive oil

2 tablespoons hot honey (store-bought or homemade)

1 tablespoon soy sauce

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1 cup broccoli florets

1 red bell pepper, sliced

1 cup corn (canned or frozen)

1 avocado, sliced

Fresh cilantro, chopped for garnish

Lime wedges for serving

Instructions
 

Cook the Rice: In a medium saucepan, cook the jasmine rice according to the package instructions. Set aside once done.

    Prepare the Chicken Marinade: In a large bowl, combine the hot honey, soy sauce, apple cider vinegar, garlic powder, onion powder, paprika, salt, and pepper. Mix well.

      Marinate the Chicken: Add the chicken pieces to the marinade and stir until coated. Let it marinate for at least 15 minutes (or up to 1 hour in the refrigerator for deeper flavor).

        Sauté the Vegetables: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the broccoli florets and sliced red bell pepper. Sauté for about 5-7 minutes until they're tender-crisp. Add the corn and cook for an additional 2 minutes. Remove the vegetables from the skillet and set aside.

          Cook the Chicken: In the same skillet, add the remaining tablespoon of olive oil. Add the marinated chicken in an even layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and slightly caramelized.

            Assemble the Bowls: In bowls, layer the cooked jasmine rice, sautéed vegetables, and hot honey chicken.

              Garnish: Top with slices of avocado, a sprinkle of fresh cilantro, and serve with lime wedges on the side.
