Ingredients

1 cup all-purpose flour

1 cup granulated sugar

1/2 cup unsweetened cocoa powder

2 tsp baking powder

1/2 tsp salt

1 cup milk

1/4 cup vegetable oil

2 tsp vanilla extract

1 cup brown sugar, packed

1/4 cup unsweetened cocoa powder (for topping)

2 cups boiling water

Vanilla ice cream or whipped cream (for serving)

Instructions

Preheat your oven to 350°F (175°C). Grease a 9-inch square baking dish or an equivalent size baking pan.

In a mixing bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, and salt until evenly combined.

Add the milk, vegetable oil, and vanilla extract to the dry ingredients. Stir until just combined; be careful not to overmix.

Pour the batter into the prepared baking dish and spread it out evenly with a spatula.

In a separate bowl, mix the brown sugar and the additional cocoa powder. Sprinkle this mixture evenly over the batter in the baking dish.

Slowly pour the boiling water over the top of the cake batter (do not stir). This will create the fudge sauce underneath as it bakes.

Bake in the preheated oven for 30-35 minutes, or until the top is set and a toothpick inserted into the center comes out clean with a few moist crumbs.

Once baked, allow the cake to cool for a few minutes before serving. It can be served warm or at room temperature.

Serve with a scoop of vanilla ice cream or a dollop of whipped cream on top to contrast with the warm pudding.
