1 lb (450g) boneless, skinless chicken thighs or breasts, sliced into thin strips

2 tablespoons olive oil

1 cup bell peppers, sliced (red, yellow, green mix)

1 cup broccoli florets

1 cup snap peas

3 green onions, chopped

4 cloves garlic, minced

1/4 cup honey

1/4 cup soy sauce (low-sodium recommended)

1 tablespoon rice vinegar

1 teaspoon fresh ginger, grated

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Sesame seeds (for garnish)

Instructions
 

Prep the Sauce: In a small bowl, mix together the honey, soy sauce, rice vinegar, minced garlic, and grated ginger. Set aside.

    Cook the Chicken: In a large skillet or wok, heat 2 tablespoons of olive oil over medium-high heat. Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Stir Fry Vegetables: In the same skillet, add the broccoli, bell peppers, and snap peas. Stir fry for about 3-4 minutes until the vegetables are bright in color and slightly tender but still crisp.

        Combine Ingredients: Return the cooked chicken to the skillet with the vegetables. Pour the honey garlic sauce over the chicken and vegetables, and stir to coat everything evenly.

          Thicken the Sauce: Add the cornstarch mixture to the stir fry and cook for an additional minute, stirring constantly until the sauce thickens and becomes glossy.

            Garnish and Serve: Remove from heat and garnish with chopped green onions and sesame seeds. Serve hot over steamed rice or noodles.
