Ingredients

1.5 lbs boneless, skinless chicken thighs (cut into 1-inch pieces)

1/4 cup honey

1/4 cup soy sauce

4 cloves garlic (minced)

1 tablespoon sesame oil

1 tablespoon apple cider vinegar

1 teaspoon fresh ginger (grated)

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional, for spice)

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Instructions

Marinate the Chicken: In a large bowl, combine honey, soy sauce, minced garlic, sesame oil, apple cider vinegar, grated ginger, black pepper, and red pepper flakes. Stir until well mixed. Add the chicken pieces to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

Prepare the Skewers: Preheat your grill or grill pan over medium-high heat. While the grill heats up, thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

Grill the Chicken: Place the skewers on the grill. Cook for about 5-7 minutes per side, or until the chicken is cooked through and displays nice grill marks. Baste with extra marinade during grilling for added flavor (ensure to only use marinade that hasn’t come into contact with raw chicken).

Serve: Once cooked, remove the skewers from the grill and let them rest for a couple of minutes. Serve hot, garnished with sesame seeds and chopped green onions if desired. These skewers pair beautifully with steamed rice or a fresh salad!
