Ingredients

1.5 lbs (680g) boneless, skinless chicken thighs

1/2 cup (120ml) honey

1/4 cup (60ml) soy sauce

4 cloves garlic, minced

1 tablespoon freshly grated ginger

2 tablespoons apple cider vinegar

1 tablespoon sesame oil

1 tablespoon cornstarch

2 tablespoons water

1 tablespoon olive oil

1 teaspoon chili flakes (optional)

Salt and pepper to taste

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions

Marinate the Chicken: In a medium bowl, whisk together honey, soy sauce, minced garlic, grated ginger, apple cider vinegar, sesame oil, chili flakes, salt, and pepper. Add the chicken thighs and coat them well. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 4 hours for deeper flavor).

Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade (reserving the marinade) and add the chicken to the skillet. Cook for about 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F or 75°C).

Prepare the Sauce: While the chicken is cooking, pour the reserved marinade into a small saucepan. In a separate bowl, mix cornstarch with water to create a slurry. Add this slurry to the saucepan and bring to a gentle boil over medium heat. Stir continuously until the sauce thickens, about 3-5 minutes.

Combine & Serve: Once the chicken is cooked, pour the thickened sauce over the chicken in the skillet. Toss to coat the chicken evenly. Cook for an additional minute to heat through.

Garnish: Remove from heat and garnish with chopped green onions and sesame seeds.

Serve: Enjoy hot over steamed white rice or with your favorite vegetables!
