1 medium onion, chopped

3 cloves garlic, minced

4 cups chicken broth

2 cups kale, chopped (stems removed)

2 large potatoes, peeled and diced (Yukon gold or red potatoes work well)

1 cup heavy cream

1 teaspoon red pepper flakes (optional, for extra heat)

Salt and black pepper to taste

Olive oil (for sautéing)

Freshly grated parmesan cheese (for garnish)

Instructions
 

Cook the Sausage: In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon. Cook until browned and fully cooked through, about 5-7 minutes. Remove sausage and set aside, leaving the rendered fat in the pot.

    Sauté the Aromatics: In the same pot, add the chopped onion and sauté for about 4-5 minutes until translucent. Add the minced garlic and sauté for another minute until fragrant.

      Add Broth & Potatoes: Pour in the chicken broth and bring to a gentle simmer. Add the diced potatoes and cook until fork-tender, about 10-15 minutes.

        Incorporate Kale & Sausage: Reduce the heat to low and stir in the cooked sausage and chopped kale. Allow the kale to wilt, cooking for about 5 minutes.
