1 pound Italian sausage (mild or spicy, according to preference)

4 large russet potatoes, sliced thinly

1 onion, diced

3 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

2 cups kale, chopped (stems removed)

1 teaspoon red pepper flakes (adjust to taste)

1 teaspoon dried thyme

Salt and pepper to taste

Olive oil (for sautéing)

Parmesan cheese (for serving)

Instructions
 

Cook the Sausage: In a large pot, heat a drizzle of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon as it cooks. Remove the sausage from the pot and set aside.

    Sauté the Vegetables: In the same pot, add a little more olive oil if needed. Add the diced onion and cook for about 3-4 minutes until translucent. Stir in the minced garlic and red pepper flakes, cooking for an additional minute until fragrant.

      Add Potatoes and Broth: Add the sliced potatoes to the pot, followed by the chicken broth. Bring to a boil, then reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.

        Combine Everything: Once the potatoes are tender, stir in the browned sausage, chopped kale, and dried thyme. Allow the soup to simmer for another 5 minutes until the kale is wilted.

          Finish with Cream: Stir in the heavy cream and let the soup heat through, about 2-3 minutes. Season with salt and pepper to taste. If the soup is too thick, you can add additional chicken broth or water.

            Serve: Ladle the soup into bowls and top with freshly grated Parmesan cheese. Pair with some crusty bread for a hearty meal!
