Ingredients

8 oz cream cheese, softened

1 cup granulated sugar

1 cup heavy cream

1 cup whole milk

1/4 cup freshly squeezed lemon juice

Zest of 2 lemons

1 tsp vanilla extract

Pinch of salt

1 cup graham cracker crumbs (for mix-in)

Optional: whipped cream and lemon slices for serving

Instructions

In a large mixing bowl, beat the softened cream cheese with the granulated sugar until smooth and creamy, using an electric mixer on medium speed.

Gradually add the heavy cream and whole milk to the cream cheese mixture, continuing to mix until well combined and smooth.

Stir in the freshly squeezed lemon juice, lemon zest, vanilla extract, and a pinch of salt. Mix until everything is well incorporated and the mixture is fluffy.

Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until the ice cream reaches a thick, creamy texture (about 20-25 minutes).

During the last few minutes of churning, add the graham cracker crumbs to the ice cream for that authentic cheesecake element.

Once churned, transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.

To serve, let the ice cream soften for a few minutes at room temperature, then scoop into bowls and top with whipped cream and lemon slices if desired.
