1 lb ground turkey or chicken

1 medium onion, diced

2 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups low-sodium chicken or vegetable broth

2 cups fresh spinach

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (adjust to taste)

8 oz whole-wheat lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded part-skim mozzarella cheese

¼ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions
 

Cook the Meat: In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Add the ground turkey or chicken, cooking until browned and cooked through, about 5-7 minutes. Drain any excess fat.

    Add Aromatics: Stir in the diced onion and minced garlic, sautéing until the onion is translucent, around 3-4 minutes.

      Combine the Base: Add the crushed tomatoes and broth to the pot. Stir in the dried oregano, basil, red pepper flakes, salt, and pepper. Bring the mixture to a simmer.
