1 lb ground turkey or Italian sausage

1 medium onion, diced

4 cloves garlic, minced

4 cups chicken or vegetable broth

1 can (15 oz) cannellini beans, drained and rinsed

1 cup heavy cream or half-and-half

1 can (14.5 oz) diced tomatoes (no salt added), undrained

2 cups fresh spinach or kale

2 teaspoons Italian seasoning

1 teaspoon salt (to taste)

½ teaspoon black pepper

3 cups lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh basil or parsley, for garnish

Instructions
 

Brown the Meat: In a skillet over medium heat, brown the ground turkey or Italian sausage until cooked through. Drain any excess fat and transfer to the slow cooker.

    Sauté Vegetables: In the same skillet, add the diced onion and sauté for about 5 minutes until translucent. Add the minced garlic and cook for an additional 1-2 minutes until fragrant, then transfer to the slow cooker.

      Combine Ingredients: In the slow cooker, add the chicken broth, cannellini beans, diced tomatoes (with juice), heavy cream, spinach, Italian seasoning, salt, and black pepper. Stir well to combine.

        Cook: Cover and cook on low for 4 hours or on high for 2 hours.

          Add Noodles: About 30 minutes before serving, stir in the broken lasagna noodles. If the soup is too thick, add more broth or water to reach desired consistency. Continue to cook until the noodles are tender.

            Finish the Soup: Once the noodles are cooked, turn off the slow cooker and gently stir in the ricotta cheese, mozzarella cheese, and Parmesan cheese until melted and creamy.
