1 pound breakfast sausage (mild or spicy, your choice)

8 large eggs

1 cup cream cheese, softened

1 cup milk

2 cups shredded potatoes (frozen hash browns work well)

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (any color)

1/2 cup diced onions

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

Fresh chives or parsley for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch casserole dish with non-stick spray or butter.

    Cook Sausage: In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked, breaking it apart into small crumbles. Drain any excess grease, if necessary. Set aside.

      Mix Eggs and Cream Cheese: In a large mixing bowl, whisk together the eggs, cream cheese, and milk until smooth. Incorporate the garlic powder, salt, and black pepper.

        Prepare Veggies: In the same skillet, sauté the diced bell peppers and onions over medium heat for about 3-4 minutes, or until they begin to soften. Remove from heat.

          Combine Ingredients: In the greased casserole dish, spread the shredded potatoes evenly across the bottom. Layer the cooked sausage, sautéed veggies, and half of the shredded cheddar cheese on top.

            Pour Egg Mixture: Pour the egg and cream cheese mixture over the layered ingredients in the casserole dish. Sprinkle the remaining cheddar cheese on top.

              Bake Casserole: Cover the dish with aluminum foil to prevent over-browning, and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until the eggs are set and the top is golden and bubbly.

                Serve: Once baked, let the casserole sit for about 5 minutes before slicing. Garnish with fresh chives or parsley if desired. Serve warm and enjoy!
