1 lb boneless, skinless chicken thighs, diced

1 medium onion, diced

3 cloves garlic, minced

1 medium red bell pepper, diced

1 medium green bell pepper, diced

2 medium carrots, diced

1 can (14.5 oz) diced tomatoes, undrained

4 cups chicken broth

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

2 tbsp chili powder

1 tbsp ground cumin

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

Salt and black pepper to taste

2 tbsp olive oil

1 lime, juiced

Fresh cilantro, chopped (for garnish)

Avocado slices (optional, for serving)

Tortilla chips (optional, for serving)

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent (about 5 minutes).

    Stir in the garlic, red, and green bell peppers, and carrots. Sauté for an additional 5 minutes until vegetables begin to soften.

      Add the diced chicken thighs to the pot, cooking until browned on all sides (about 5-7 minutes).

        Stir in the chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper. Cook for 1-2 minutes until the spices are fragrant.

          Pour in the diced tomatoes with their juices, chicken broth, black beans, and corn. Stir to combine.

            Bring the soup to a boil, then reduce heat to low. Cover and simmer for 25-30 minutes, allowing the chicken to cook through and the flavors to meld.

              Before serving, stir in lime juice to brighten the flavors.

                Serve hot, garnished with fresh cilantro and avocado slices if desired. Pair with tortilla chips for an extra crunch!
