1 lb boneless, skinless chicken thighs, diced

1 tablespoon olive oil

1 medium onion, diced

3 garlic cloves, minced

2 medium carrots, sliced

2 celery stalks, sliced

4 cups low-sodium chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon dried oregano

1 cup frozen peas

Salt and pepper, to taste

2 cups baby spinach

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Chicken: In a large pot over medium heat, add olive oil. Once heated, add the diced chicken thighs and season with salt and pepper. Sauté until golden brown, about 5-7 minutes. Remove chicken from the pot and set aside.

    Cook the Vegetables: In the same pot, add the diced onions, garlic, carrots, and celery. Sauté for 5-7 minutes or until the vegetables begin to soften and the onions become translucent.

      Create the Soup Base: Add in the chicken broth, thyme, and oregano. Bring to a simmer, scraping the bottom of the pot to lift any browned bits.

        Combine and Simmer: Return the browned chicken to the pot, reduce heat to low, and allow the soup to simmer for 15-20 minutes until the chicken is cooked through and flavors meld together.

          Finish the Soup: Stir in the heavy cream, frozen peas, and baby spinach. Allow the soup to simmer for another 3-5 minutes until the spinach wilts and the peas are heated through.

            Add Freshness: Stir in the lemon juice to brighten the flavors, and adjust salt and pepper to taste.
