1 lb Italian turkey sausage (or plant-based sausage)

4-5 medium potatoes, thinly sliced (Yukon Gold or Russet)

1 medium onion, diced

3 cloves garlic, minced

4 cups low-sodium chicken or vegetable broth

1 cup kale, chopped (stems removed)

1 cup heavy cream (or coconut cream for a dairy-free option)

2 teaspoons Italian seasoning

Salt and pepper to taste

1 tsp red pepper flakes (optional for a spicy kick)

Fresh parsley for garnish (optional)

Instructions
 

Brown the Sausage: In a skillet over medium heat, brown the Italian turkey sausage until cooked through. Break it up into small pieces while cooking. Drain excess fat and set aside.

    Prep the Slow Cooker: In your slow cooker, add the sliced potatoes, diced onion, minced garlic, and the cooked sausage.

      Add Broth and Seasonings: Pour in the chicken or vegetable broth, add the Italian seasoning, and stir to combine. Season with salt, pepper, and red pepper flakes if using.

        Slow Cook: Cover the slow cooker and cook on low for about 6-7 hours or on high for 3-4 hours, until the potatoes are tender.

          Stir in Kale & Cream: About 30 minutes before serving, add the chopped kale and heavy cream to the pot. Stir well and let it cook until the kale is wilted and tender.

            Serve: Taste and adjust for seasoning. Ladle into bowls and garnish with fresh parsley if desired.
