2 cups rolled oats

1 cup almond flour

1/2 cup honey or maple syrup

1/2 cup unsweetened applesauce

1/4 cup coconut oil, melted

1 teaspoon pure vanilla extract

1/2 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup dark chocolate chips (preferably 70% cocoa or higher)

Optional: 1/4 cup chopped nuts (walnuts or pecans) for added crunch

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.

    Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, baking powder, cinnamon, and salt. Stir until evenly mixed.

      Combine the Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), unsweetened applesauce, and vanilla extract until smooth and well combined.

        Combine Everything Together: Add the wet ingredients to the dry ingredients and mix until everything is just combined. Fold in the dark chocolate chips and nuts (if using).

          Transfer to Baking Dish: Pour the mixture into the prepared baking dish. Use a spatula or your hands to press the mixture down firmly into an even layer.

            Bake: Bake in the preheated oven for about 25-30 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.

              Cool and Cut: Remove from the oven and allow the bars to cool in the dish for about 10 minutes. Using the parchment overhang, lift the bars out of the pan and allow to cool completely on a wire rack before cutting into squares.

                Store: Enjoy immediately or store in an airtight container at room temperature for up to a week or in the fridge for extended freshness.
