2 boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup broccoli florets

1 cup bell pepper, sliced (any color)

1 cup zucchini, sliced

1 medium onion, diced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Prepare Chicken: In a medium bowl, season the chicken pieces with salt, pepper, and half of the Italian herbs. Mix well to coat evenly.

    Heat Oil: In a large skillet over medium heat, add the olive oil. Once hot, add the seasoned chicken pieces and sauté for about 5-7 minutes until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the diced onion and minced garlic. Sauté for about 2 minutes until fragrant. Then add the broccoli, bell pepper, and zucchini. Stir-fry the vegetables for 5-7 minutes until they are tender but still crisp.

        Combine Chicken and Veggies: Return the cooked chicken to the skillet. Add the remaining Italian herbs, red pepper flakes (if using), and lemon juice. Stir everything together and cook for another 2-3 minutes to combine the flavors.
