2 ripe avocados, peeled and pitted

2 cups cooked chicken breast, shredded or diced

1/2 cup Greek yogurt (plain, unsweetened)

1 tablespoon Dijon mustard

1 tablespoon lime juice (freshly squeezed)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro or parsley, chopped

Instructions
 

In a mixing bowl, mash the ripe avocados using a fork until you achieve a creamy texture. Leave some chunks for added texture, if desired.

    Add the Greek yogurt, Dijon mustard, lime juice, garlic powder, onion powder, salt, and pepper to the mashed avocado. Mix well until all the ingredients are fully combined and creamy.

      Fold in the shredded or diced chicken, ensuring that the chicken is evenly coated with the avocado mixture.

        Gently mix in the halved cherry tomatoes, diced cucumber, chopped red onion, and herbs of your choice (cilantro or parsley). Stir until everything is well distributed.

          Adjust seasoning with additional salt and pepper if needed.
