1 cup pasta (small shapes like ditalini or orzo)

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups fresh spinach or kale

1 cup cooked chicken, shredded (optional for a protein boost)

Fresh basil leaves for garnish

Grated Parmesan cheese for serving

Instructions
 

Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add diced onion and cook until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute until fragrant.

    Add the Vegetables: Toss in the sliced carrots, diced celery, zucchini, and mushrooms. Cook for 5-7 minutes until the vegetables begin to soften.
