4 boneless, skinless chicken thighs

1 cup fresh pineapple chunks

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 red onion, sliced

2 tablespoons olive oil

1/4 cup soy sauce

2 tablespoons honey

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/2 teaspoon black pepper

1/2 teaspoon sea salt

1/4 teaspoon crushed red pepper flakes (optional)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    Marinate the Chicken: In a medium bowl, whisk together the soy sauce, honey, minced garlic, grated ginger, black pepper, and sea salt. Add the chicken thighs to the marinade and let them soak for at least 15 minutes (or up to 1 hour in the fridge for extra flavor).

      Prepare the Vegetables: While the chicken marinates, slice the red and yellow bell peppers and the red onion. In a large mixing bowl, combine the sliced vegetables and pineapple chunks.

        Coat the Vegetables: Drizzle the olive oil over the vegetables and pineapple. Toss them to ensure they are evenly coated with the oil, then spread them out in a single layer on one side of the prepared baking sheet.

          Add the Chicken: Once marinated, remove the chicken thighs from the marinade and place them on the other side of the baking sheet. Pour any remaining marinade over the chicken for extra flavor.

            Bake the Dish: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C) and the vegetables are tender and caramelized.
