2 cups cooked chicken breast, shredded (preferably grilled or rotisserie)

1 cup fresh pineapple, diced

1/2 cup red bell pepper, diced

1/2 cup celery, chopped

1/4 cup red onion, finely chopped

1/2 cup unsweetened Greek yogurt (or dairy-free yogurt for a vegan option)

2 tablespoons mayonnaise (use a gluten-free option)

1 tablespoon apple cider vinegar

1 tablespoon honey (or agave syrup for a vegan option)

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

Salt and pepper to taste

1/4 cup chopped fresh cilantro or parsley (for garnish)

Lettuce leaves for serving

Instructions
 

In a large mixing bowl, combine the shredded chicken, diced pineapple, red bell pepper, celery, and red onion. Toss gently to combine the ingredients.

    In a separate small bowl, whisk together the Greek yogurt, mayonnaise, apple cider vinegar, honey, Dijon mustard, garlic powder, salt, and pepper until well combined and creamy.

      Pour the dressing over the chicken mixture and stir until everything is evenly coated.

        Taste the salad and adjust seasoning if necessary, adding more salt, pepper, or honey according to your preference.

          Refrigerate the salad for at least 30 minutes to allow the flavors to meld.
