2 cups cooked chicken breast, diced

1 cup fresh pineapple, diced

1/2 cup red bell pepper, diced

1/2 cup celery, finely chopped

1/4 cup green onions, sliced

1/2 cup chopped macadamia nuts (or almonds for a nut-free option)

1/2 cup Greek yogurt (plain, unsweetened)

2 tablespoons honey (or agave for a vegan option)

1 tablespoon Dijon mustard

1 tablespoon lime juice

Salt and pepper to taste

Fresh cilantro or parsley for garnish

Instructions
 

Prepare the Chicken: If you haven't already, cook the chicken breast by boiling or baking until fully cooked. Let it cool, then dice into bite-sized pieces.
