Ingredients
  

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 red bell pepper, diced

1 small onion, diced

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp cumin

½ tsp chili powder

Salt and pepper, to taste

2 cups spinach or kale

2 tbsp olive oil

Fresh cilantro or parsley for garnish (optional)

Lime wedges for serving (optional)

Instructions
 

Prepare the Ingredients: Start by peeling and dicing the sweet potatoes, bell pepper, and onion. Mince the garlic and set all ingredients aside.

    Cook the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes, season with salt and pepper, and cook for about 10-12 minutes, stirring occasionally, until they are tender and slightly caramelized. Remove the sweet potatoes from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and bell pepper. Sauté for about 5 minutes, or until the onion becomes translucent. Add the minced garlic and cook for an additional 1 minute.

        Brown the Turkey: Push the vegetables to the side of the skillet and add the ground turkey. Break it apart with a spatula and cook until browned, about 5-7 minutes. Make sure to stir well to incorporate the vegetables with the turkey.

          Season: Once the turkey is cooked, sprinkle in the smoked paprika, cumin, chili powder, and the previously cooked sweet potatoes. Stir everything together and let it cook for another 3-4 minutes to blend the flavors.

            Add Greens: Finally, stir in the spinach (or kale) and cook just until wilted, about 2 minutes.

              Serve: Taste and adjust the seasoning if necessary. Serve hot, garnished with fresh cilantro or parsley, and lime wedges for a fresh kick.
