1 pound ground turkey

2 medium sweet potatoes, peeled and diced

1 bell pepper (any color), diced

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil

1 cup spinach (optional)

Fresh cilantro or parsley for garnish

Lime wedges for serving

Prepare the Ingredients: Begin by peeling and dicing the sweet potatoes into small cubes for quicker cooking. Dice the bell pepper and onion, and minced the garlic.

    Cook the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and cook for about 10-12 minutes, stirring frequently until they are tender and slightly caramelized. Season with salt and pepper.

      Add Aromatics: Once the sweet potatoes are cooked, push them to one side of the skillet. Add the remaining tablespoon of olive oil to the empty side and add the diced onion and bell pepper. Sauté for 4-5 minutes until softened, then stir in the minced garlic and cook for another minute until fragrant.

        Brown the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook for about 5-7 minutes or until browned. Season with smoked paprika, cumin, chili powder, salt, and pepper. Stir everything to combine.

          Incorporate Spinach (Optional): If using, add the spinach to the skillet and stir until wilted, about 2 minutes.
