4 boneless, skinless chicken breasts

1/2 cup soy sauce

1/4 cup brown sugar

1/4 cup rice vinegar

2 tablespoons sesame oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon cornstarch

1 tablespoon water

1 tablespoon sesame seeds (for garnish)

2 green onions, chopped (for garnish)

Prepare the Marinade: In a medium bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, and grated ginger until well combined.

    Marinate Chicken: Place the chicken breasts in a resealable bag or a shallow dish. Pour the teriyaki marinade over the chicken, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

      Make a Thickening Sauce (optional): In a small saucepan, combine the remaining marinade (about half of the total). Bring to a simmer over medium heat. In a separate small bowl, mix cornstarch and water into a slurry. Add it to the saucepan and stir until the sauce thickens. Remove from heat and set aside.

        Preheat the Grill: Heat your grill to medium-high heat (about 375°F to 400°F). Lightly oil the grate to prevent sticking.

          Grill the Chicken: Remove the chicken from the marinade and discard the marinade. Season the chicken with salt and pepper. Place the chicken on the grill and cook for 6-8 minutes per side, or until the internal temperature reaches 165°F.

            Baste with Sauce (optional): During the last few minutes of grilling, you can brush the thickening sauce onto the chicken for extra flavor and a nice glaze.

              Rest and Serve: Once cooked, remove the chicken from the grill and let it rest for 5 minutes. Slice the chicken, if desired, and drizzle with any remaining thick sauce. Garnish with sesame seeds and chopped green onions.
