For the Grilled Lemon Herb Chicken:

4 boneless, skinless chicken breasts

1/4 cup fresh lemon juice

2 tablespoons lemon zest

1/4 cup olive oil

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)

Salt and pepper to taste

For the Avocado Salad:

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1 small red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Marinate the Chicken: In a mixing bowl, combine the lemon juice, lemon zest, olive oil, minced garlic, oregano, thyme, salt, and pepper. Whisk until well combined. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes to 2 hours for maximum flavor.

    Prepare the Grill: Preheat your grill to medium heat. Make sure to oil the grates to prevent sticking.

      Grill the Chicken: Remove the chicken from the marinade and discard the leftover marinade. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink in the center. Once cooked, remove from the grill and let it rest for a few minutes.

        Make the Avocado Salad: In a large bowl, combine the diced avocados, cherry tomatoes, red onion, and cilantro. Drizzle with lime juice and season with salt and pepper. Toss gently to combine, being careful not to mash the avocados.

          Serve: Slice the grilled chicken and serve it alongside the avocado salad. Drizzle with additional olive oil if desired, and garnish with extra lemon wedges or cilantro.
