Ingredients

4 boneless, skinless chicken breasts

1/4 cup olive oil

4 cloves garlic, minced

Zest of 1 lemon

1/4 cup fresh lemon juice (about 2 lemons)

2 teaspoons dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions

In a mixing bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, dried oregano, salt, and black pepper. Whisk until well blended.

Place the chicken breasts in a resealable plastic bag or shallow dish, and pour the marinade over the chicken. Ensure each piece is evenly coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes (up to 4 hours for more flavor).

Preheat your grill to medium-high heat.

Remove the chicken from the marinade, allowing excess to drip off, and discard the remaining marinade.

Place the chicken breasts on the grill and cook for 6-7 minutes on one side, until grill marks form. Flip and cook for an additional 5-6 minutes, or until the internal temperature reaches 165°F (75°C).

Remove the chicken from the grill and let it rest for 5 minutes.

Slice the chicken, garnish with fresh chopped parsley, and serve with your favorite sides.
