1 lb chicken breast, cut into 1-inch cubes

1 bell pepper (red, yellow, or green), cut into 1-inch pieces

1 medium zucchini, sliced into half-moons

1 red onion, cut into 1-inch pieces

1 cup cherry tomatoes

3 tablespoons olive oil

3 tablespoons soy sauce

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

Marinate the Chicken: In a mixing bowl, whisk together olive oil, soy sauce, honey, minced garlic, paprika, dried oregano, salt, and pepper. Add the chicken cubes to the marinade, coat thoroughly, and let it marinate for at least 30 minutes (or up to 2 hours for enhanced flavor) in the refrigerator.

    Prepare Vegetables: While the chicken marinates, chop the bell pepper, zucchini, red onion, and prepare the cherry tomatoes. You can also lightly drizzle the vegetables with olive oil and season with salt and pepper for extra flavor.

      Assemble the Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated chicken and vegetables onto the skewers, alternating between chicken and veggies for a colorful presentation.

        Preheat the Grill: Preheat your grill to medium-high heat, about 375°F to 400°F (190°C to 200°C). Lightly oil the grill grates to prevent sticking.

          Grill the Skewers: Once hot, place the skewers on the grill. Cook for about 10-12 minutes, turning occasionally until the chicken is cooked through (internal temperature of 165°F / 75°C) and the vegetables are tender and slightly charred.
